Pineapple Muffins

A family favorite! Perfect for breakfast, snack, or dessert. Sweet, moist, and delicious!*
1/2 cup oil
1/3 cup honey
1 egg
1 3/4 cup whole wheat flour
1 tsp. baking soda
2 tsp. baking powder
19 oz. tin pineapple with juice (crushed pineapple or tidbits...we like tidbits)
1. Combine wet ingredients.
2. Combine dry ingredients.
3. Mix together until moistened and stir in pineapple.
4. Spoon into muffin cups and bake at 400 for 20 minutes.
Mommy's Pumpkin Muffins

4 eggs
1/2 cup Canola oil
1/3 cup Honey
1/4 cup molasses
1 1/2 cups pumpkin cooked and mashed
2 1/2 cups Whole Wheat flour
1/2 cup bran
3 tsp. baking powder
1/4 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1 cup raisins
The directions are simple:
Preheat the oven to 375 Mix all wet ingredients, and then add all the dry ingredients and mix until combined, then add the raisins. Scoop batter into greased muffin pans, usually makes two dozen muffins, bake for 20 minutes. Then Enjoy!
Zucchini Muffins

3 cups flour
1 cup sugar
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1 ¼ tsp. baking powder
1 ½ cups chopped nuts
1 cup oil
3 tsp. vanilla
3 eggs (beat until foamy)
2 cups grated zucchini
Mix dry ingredients together, and then mix wet ingredients together. Dump wet ingredients into dry mix. Bake at 325 degrees for 1 hour or until done. The recipe will make two greased pans or muffin tins.
~ Middle Eastern Tea

5-10 cloves of cardamom
2 tea bags of a black tea (English breakfast tea, etc.)
Approximately 5 cups water
Sugar
Boil the water in a kettle with the cardamom cloves for about 15 minutes. Steep the teabags in the water. Remove cardamom, and serve the tea with sugar. My mother got this recipe from some people out of Afghanistan, enjoy! Sarah
~ How to make simple soft cheese!

1 gallon goats or cows milk
¼ cup vinegar
Heat milk to 195 degrees F. Stir constantly to keep it from scorching. When milk is heated, add ¼ cup vinegar, and let sit for 5 minutes. The milk will quickly coagulate into curds, and greenish whey.
Cover a colander with cheese cloth and pour curds and whey into it. After it is drained (it takes a few minutes), wrap the edges of the cheese cloth up to make a sort of bag. Hang the bag of curds over the colander and let drain for 1 hour. When it is finished draining put the soft cheese into a bowl and add salt and pepper. You can also add some different herbs.

2 tbs. paprika
2 tbs. chili powder
1-2 tbs. cayenne
2 tbs. garlic powder
2 tbs. sucanat
1 tbs. cumin
1 tbs. dry mustard
1 tsp. dried sage
1 tsp. dried oregano
1 tsp. ground pepper
¼ cup sat
Mix all ingredients and rub on ribs or your steak. Tastes really yummy!
